Tasting Notes
Aromas of blackberry, cherry, and currant flourish with a hint of cassis. The palate is filled with ripe blackberry and cherry, and undertones of vanilla, pepper and spiced oak. Ample tannins make for an elegant, structured finish.

Protein– Lamb, beef stew, short ribs, bison, pizza/pasta with red sauce, oxtail stew, goulash, and bison burger.
Cheese– Camembert, grouda, Caprino Nocetto, extra sharp cheddar, gorgonzola, Roquefort, Evora, asiago, and Maroilles.
